Breakfast with Blueberry Oatmeal Muffins

Blueberry oatmeal muffins are a classic breakfast treat that’s both comforting and nutritious. These muffins are packed with flavour and perfect for enjoying with a cup of coffee or tea. Let’s get baking.

Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 cup old-fashioned oats
  3. ¾ cup granulated sugar
  4. 2 teaspoons baking powder
  5. ½ teaspoon baking soda
  6. ½ teaspoon salt
  7. 2 cup fresh or frozen blueberries
  8. ½ cup milk
  9. ¼ cup vegetable oil
  10. 1 teaspoon vanilla extract

Instructions

1. Preheat oven

Turn your oven to 350°F (175°C). Line a muffin tin with paper liners.

2. Combine dry ingredients

  In a large bowl, whisk together flour, oats, sugar, baking powder, baking soda, and salt.

3. Mix wet ingredients

In a separate bowl, whisk together eggs, milk, oil, and vanilla extract.

4. Combine wet and dry

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

5.. Fold in blueberries

 Fold in the blueberries.

6.  Bake

Fill muffin cups about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the enter comes out clean.

Tips

Fresh blueberries

 For the best flavour, use fresh blueberries. If using frozen, don’t thaw them before adding to the batter.

Don’t over mix

Over mixing can result in tough muffins. Mix just until the ingredients are combined.  

Let cool

Allow the muffins to cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

These blueberry oatmeal muffins are a delightful and satisfying breakfast option. Enjoy them warm with a pat of butter or a dollop of yogurt.
