Gluten-Free Sweet Potato & Sausage Egg Cups

Sweet potato casserole is a beloved Than Breakfast dish, but it doesn’t have to be off-limits for those with gluten sensitivities. This gluten-free version is just as delicious and comforting as the traditional recipe.

Ingredients

  1. 3 large sweet potatoes, peeled and cubed
  2. 1 cup granulated sugar
  3. 1/2 cup unsalted butter, melted
  4. 3 large eggs, beat
  5. 1/2 cup milk
  6. 1/4 cup gluten-free all-purpose flour
  7. 1 teaspoon vanilla extract
  8. 1 teaspoon cinnamon
  9. 1/2 teaspoon nutmeg
  10. 1/4 teaspoon salt
  11. Marshmallows, for topping

  Instructions

Preheat oven

Turn your oven to 350°F (175°C).

Cook sweet potatoes

Boil or bake sweet potatoes until tender. Mash them thoroughly.

Combine ingredients

In a large bowl, combine mashed sweet potatoes, sugar, melted butter, eggs, milk, gluten-free flour, vanilla, cinnamon, nutmeg, and salt. Mix until well combined.

Bake

Pour the mixture into a greased baking dish. Bake for 30-35 minutes, or until set.

Add marshmallows

Top with marshmallows and bake for an additional 5-10 minutes, or until marshmallows are golden brown.

Tips

 Choose the right flour

     Use a gluten-free all-purpose flour blend specifically designed for baking.

Don’t over bake

  Over baking can dry out the casserole. Check for doneness by inserting a toothpick into the   centre. It should come out clean.

Make-ahead

 You can prepare the casserole up to a day in advance and refrigerate it before baking.
