Spanish Tortilla Pan

Introduction

The Spanish tortilla, also known as tortilla ed patatas, is a classic Spanish dish that’s beloved for its simplicity and delicious flavour. It’s essentially a potato omelette, made with thinly sliced potatoes, eggs, and often onions. The key to a great Spanish tortilla is in the preparation of the potatoes and the cooking technique.

Ingredients

To make a Spanish tortilla, you’ll need

  1. Potatoes

 Russet or Yukon Gold potatoes work best.

  1. Eggs

 The number of eggs will depend on the size of your tortilla.

  1. Onion

 Optional, but adds extra flavor.

  1. Olive oil

 For cooking.

  1. Salt and pepper

To taste.

Non-stick skillet

        A 10-inch skillet is a good size for a small tortilla.

    Spatula

       To flip the tortilla.

      Plate

        To help you flip the tortilla.

        Instructions

        Prepare the Potatoes

          Peel the potatoes and cut them into thin, even slices.

          Place the potato slices in a colander and rinse with cold water to remove excess starch.

         Pat the potatoes dry with paper towels.

        Cook the Potatoes

        Heat olive oil in a non-stick skillet over medium heat.

        Add the potato slices to the skillet and cook until golden brown and tender.

        Season with salt and pepper.

        Cook the Onion (optional)

        If using an onion, add it to the skillet with the potatoes and cook until softened.

        Whisk the Eggs

        In a large bowl, whisk together the eggs, salt, and pepper.

        Combine the Potatoes and Eggs

        Remove the potatoes and onion from the skillet and set aside.

        Pour the whisked eggs into the skillet.

        Cook the Tortilla

        Cook the eggs over low heat until set around the edges but still slightly runny in the center.

        Distribute the cooked potatoes and onion evenly over the eggs.

        Tips

        Don’t Overcook the Potatoes

         If the potatoes are too soft, the tortilla will fall apart.

        Use a Non-Stick Skillet

         This will prevent the tortilla from sticking.

        Cook the Eggs Over Low Heat

         This will prevent the eggs from burning.

        Let the Tortilla Rest

        After cooking, let the tortilla rest for a few minutes before cutting into it. This will help it hold its shape.

        Variation

        Add Cheese

        Grated cheese, such as Manchego or cheddar, can be added to the tortilla for a cheesy flavor.

        Use Different Vegetables

         Other vegetables, such as spinach, mushrooms, or bell peppers, can be added to the tortilla for added flavour and nutrients.
