Introduction

Ingredients

  1. 1 pound ground beef
  2. 1 pound ground pork
  3. 1 onion, chopped  
  4. 1 bell pepper, chopped
  5. 2 cloves garlic, minced  
  6. 1 tablespoon chili powder
  7. 1 teaspoon cumin
  8. 1 teaspoon dried oregano
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon black pepper
  11. 1 (15-ounce) can diced tomatoes
  12. 1 (15-ounce) can kidney beans, rinsed and drained  
  13. 1 (15-ounce) can black beans, rinsed and drained  
  14. 1 (15-ounce) can corn, drained  
  15. 1 (15-ounce) can diced green chiles
  16. 1 cup beef broth
  17. 1/2 cup water

Instructions

Brown the meat

 In a large pot or Dutch oven over medium-high heat, brown the ground beef and pork. Break up the meat with a spoon as it cooks.

Sauté the vegetables

 Add the onion, bell pepper, and garlic to the pot and sauté until softened, about 5 minutes.

Add the spices

 Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.

Combine the ingredients

 Add the diced tomatoes, kidney beans, black beans, corn, diced green chiles, beef broth, and water to the pot. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes, or until the flavors have combined and the chili has thickened.

Serve

Serve hot, topped with your favorite toppings, such as shredded cheese, chopped green onions, sour cream, or avocado.

Tips

Spice it up

 If you like your chili spicy, add a diced jalapeño pepper or a pinch of cayenne pepper.

Make it vegetarian

Replace the ground beef and pork with a plant-based protein, such as crumbled tempeh or tofu.
