Banana Blueberry Oatmeal Muffins

Banana blueberry oatmeal muffins are a perfect combination of sweet, healthy, and delicious.These muffins are packed with nutrients and perfect for a quick and satisfying breakfast.

Ingredients

  1. 2 ripe bananas, mashed

2. 1 cup Over mixing blueberries, fresh or frozen

3. 1 cup old-fashioned oats

4. 1 cup all-purpose flour

5. ½ cup granulated sugar

6. 1 teaspoon baking powder

7. ½ teaspoon baking soda

8. ¼ teaspoon salt

9. 2 large eggs

10.¼ cup vegetable oil

11.1 teaspoon vanilla extract

Instructions

1.Preheat oven

Turn your oven to 350°F (175°C). Line a muffin tin with paper liners.

2.Combine wet ingredients

In a large bowl, whisk together mashed bananas, eggs, oil, and vanilla extract.

3.Mix dry ingredients

In a separate bowl, whisk together flour, oats sugar, baking powder, baking soda, and salt.

4.Combine wet and dry

Gradually add the dry ingredients to the

Wet ingredients, stirring until just combined.

5.Fold in fruit

Gently fold in blueberries and mashed bananas.

6.Bake

Fill muffin cups about 2/3 full.

Bake for 22-25 minutes, or until a toothpick inserted into the centre comes out clean.

Tips

Ripe bananas

 Use overripe bananas for a sweeter muffin.

Don’t over mix

 Over mixing can lead to tough muffins.  

Let cool

 Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
