Breakfast Salad Recipe  

Introduction

Ingredients

  1. 1 cup mixed greens
  2. 1/2 cup diced cucumber
  3. 1/4 cup diced red bell pepper
  4. 1/4 cup crumbled feta cheese
  5. 1/4 cup toasted almonds
  6. 1/4 cup balsamic vinaigrette dressing

 Poached Eggs

  1. 2 large eggs
  2. 1 tablespoon white vinegar
  3. Salt and pepper to taste

Instructions

Prepare the salad

 In a large bowl, combine the mixed greens, cucumber, red bell pepper, feta cheese, and toasted almonds.

Poach the eggs

 In a saucepan, bring a large pot of water to a simmer. Add the white vinegar to the water. Crack the eggs into a small bowl and gently slip them into the simmering water. Cook for 3-4 minutes, or until the whites are set but the yolks are still runny. Remove the poached eggs with a slotted spoon and place them on a paper towel-lined plate to drain.  

Assemble the salad

Top the salad with the poached eggs and drizzle with balsamic vinaigrette dressing. Season with salt and pepper to taste.
