Instructions

Soak the Ingredients

Drain the water from the soaked ingredients and transfer them to ablender or food processor.

Grind until the batter is smooth and slightly thick. You may need to add a little water to achieve the desired consistency.

Batter

Transfer the batter to a large bowl and cover it with a damp cloth or plastic wrap.

Let it ferment in a warm place for 8-10 hours, or overnight. The batter will become frothy and slightly sour.

Cook the Dosa

Heat a dosa pan or non-stick skillet over medium heat.

Pour a thin layer of batter onto the hot pan, spreading it evenly with the back of a ladle or spatula.

Cook for 2-3 minutes, or until the edges are crisp and the bottom is golden brown.

Flip the dosa and cook for another 30 seconds or until cooked through.

Serve the dosa hot with your favorite chutney, sambar, or coconut chutney.
